Once a year we have a Pumpkinpalooza around our home. For several weeks I try out recipe after recipe with pumpkin in it. Boy, did I start with a zinger for this year! Last night, I made what has got to be the EASIEST cake ever, and it has all the favorite flavors of fall in each bite.

Two-Ingredient Pumpkin Cake with Apple Cider Glaze

For the cake:
1 box yellow cake mix
1 15 ounce can pumpkin puree
For the apple cider glaze:
1 1/2 cups powdered sugar
3 tablespoons apple cider
3/4 teaspoon pumpkin pie spice
Mix the cake mix and pumpkin puree in your mixer until well blended. It will be thick! Spread the mixture into a greased 7×11 pan (this is a small rectangular, casserole dish). Bake at 350 degrees for 28 minutes or until a toothpick or fork comes out clean. Do NOT overbake!!!
Let cool for 10-15 minutes, then flip onto a plate or platter. Make the glaze while you are waiting. Combine the powdered sugar, cider and pumpkin pie spice until smooth. Glaze will be thick but pourable. After you flip the cake onto the batter, pour 2/3 of the glaze on top. Save some of the glaze to pour on each piece after you cut it. Serve warm!
