Gracie’s Favorite

This past weekend we traveled to Mississippi to move my baby sister into college {insert sobs and gobs of Kleenex}. I love her so much. We share a love of beach vacations {even though she’ll always be 49 shades darker than me}, country music {a little T Swift is all we need ;)} and even the same major {maybe she’ll actually use hers!}.

I am so, so proud of her for stepping out, for being brave, for embarking on a new adventure. We also share a love of fettuccine, so this recipe’s in honor of my incredible sister. I love you, Gracie!

3-Ingredient Fettuccine Alfredo

2 sticks of butter

1/2 pound grated Parmesan cheese


1 lb fettuccine (I love Delallo organic whole wheat pasta!)


1. Using an electric mixer, beat the Parmesan and butter until creamy.

2. In a large pot of boiling salted water, cook fettuccine according to package instructions until al dente, about 12 minutes. Reserve about 1/2 cup pasta water; drain pasta.

3. Return fettuccine to warm pot. Toss pasta with 1/2 teaspoon salt, cheese mixture and 1/4 cup pasta water. Add more pasta water, as needed.

Seriously, could that be any easier? I made this again this week and topped it with shrimp sauteed with garlic, olive oil and crushed red pepper flakes. Scrumptious! Gracie, next time you’re here, I’ll make you some 😉
