I’ve been in a very “Greek” mood recently. Maybe it’s my recent obsession with feta or the always classic pairing of crisp blue and white. Or maybe it’s just that I read about this guy’s trip, and now I want to live on a house boat in the Greek isles…
Since, I’m not moving anywhere anytime soon, I’ve appeased my Greek curiosity in the kitchen. I tried this tasty Greek spread a couple weeks ago, and Matt and I finished it off in less than 24 hours. Confession: I may have even eating it for breakfast. A dip with red pepper, hummus and feta. How could you go wrong? Try it today. Right now. It’s that good.
Easy Greek Spread

8 oz. hummus {I used red pepper hummus)
6 oz. plain Greek yogurt
½ tsp. pepper
1 tsp. lemon juice
½ cucumber, seeded and chopped
2 roma tomatoes, seeded and chopped
½ bunch of green onions, chopped
6 oz. feta cheese, crumbled
1 red pepper, thinly sliced
1 tsp. extra virgin olive oil
Spread the hummus in the bottom of a 9×9 dish. Mix the Greek yogurt with the pepper and lemon juice. Spread the yogurt mixture over the hummus. Cut the cucumber, tomatoes, onions and peppers into small pieces and layer on top of the yogurt mixture. (Tip: Save a little of the veggies for the top of the dip to make it look pretty). Spread the feta cheese on top and finish off with the pretty veggies you saved. Drizzle the olive oil on top. We ate it with Simply Naked pita chips. Yowza! This is tasty! Enjoy!
