When life gives you lemons…

Make Sunny Citrus Bars!

Today has been a long day for all the Robertsssss (what is the plural of my last name?!?!). Matt and I didn’t get much sleep last night because Lyd woke up in pain and had a hard time going back to sleep. She has been attached to my hip because the moment I think about putting her down she cries the most pitiful little moan. I thought it was all because of teething, but her fever has been creeping up all day, so I took her to the doc this afternoon and wouldn’t you know… it’s a double ear infection. boo! 😦

So, I drove by Walgreen’s to pick up another antibiotic (we are keeping Mr. Penicillin in business around here) when I get a text from Matt saying that a client he’s been pursuing for a while backed out. Crazy company doesn’t know what they’re missing! He was bummed. I was tired. Lydia was sick. I got home and did what I always do when I’m feeling down… start cooking. I’m a sucker for citrus desserts and I had seen one that looked yummy in the Coastal Living magazine I’ve read from cover to cover three times now. Since my bff Heather dropped me off a sack of fresh citrus last night, I knew I had the ingredients.

These are yummy, easy and a good way to celebrate when life gives you lemons 🙂

Sunny Citrus Bars
from Coastal Living December/January 2011

1 cup butter, softened
2 1/3 cups all-purpose flour, divided
1/2 cup powdered sugar
4 large eggs, lightly beaten
1 3/4 cups sugar
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon orange zest
1/3 cup fresh orange juice
1/2 cup fresh lemon juice
Powdered sugar

1. Beat butter at medium speed with an electric mixer until creamy. Gradually add 2 cups flour and 1/2 cup powdered sugar. Beat just until a smooth dough is formed. Press into a lightly greased, foil-lined 13×9 inch baking pan. Bake at 350 degrees for 20 minutes or until lightly browned.

2. Meanwhile, whisk together eggs, remaining 1/3 cup flour, sugar and next 5 ingredients in a large bowl; pour over baked crust. Bake at 350 degrees for 25 minutes or until set. Let cool completely in pan; chill, if desired. Sprinkle with powdered sugar, and cut into bars. Makes 2 dozen.

Matt’s off to get us Chick-fil-A for dinner (the #1 is my ultimate comfort food) and we’ll munch on these sunny citrus bars and keep giving Lyd her medicine and lots of TLC and we’ll all feel a little better 🙂
